The twist built in to the shield around the pair of conductors (also know as the "drain" sometimes) forces one to wrap them in manner that doesn't destroy this feature. Breaking strands and kinking the shield are inevitable if you tie your cables in knots! Besides the fact that it's just a lot easier to unwrap them and keep them organized this way.
